Wine & Dine for the Weekend

Jeremy and I spent this past weekend with friends and food and loved every minute of it.

Friday after work we met up with Katie and Dan at Las Fuentes Mexican Restaurant to have margaritas. Katie and I had the special for the night while Dan and Jeremy went for frozen strawberry margaritas. The girls will be returning on a Monday night in the future to take advantage of buy one get one margaritas.

For dinner I ended up choosing Chicken Fajitas.

I tend to look for something on the menu that comes with beans and rice.

We spent the whole night laughing until we cried. Catching up was so much fun and I cannot wait to see them again.

Saturday morning Jeremy and I had coffee and then decided to head out to do errands. We needed everything from groceries to shampoo and conditioner. By the time it was 2:30pm we had all the groceries put away and I had just enough time to squeeze in an abs and arms workout. (Disclaimer: I couldn’t move to do anything else after my legs and cardio workout Friday morning.)

Ke$ha got a walk about 4pm and then I grabbed a quick shower before we headed to our friend Zina’s house for dinner. We love to go to Zina’s for a meal! She always goes all out and makes the meal so enjoyable. I am envious of how well she entertains.

Part of the fun in eating at Zina’s is that she makes us Bosnian food. We never know what she is going to feed us but we always know it will be delicious.

This was the full spread. We started with meat and rice rolled in sauerkraut leaves. These were meant to be eaten with a side of mashed potatoes and dollop of sour cream.

The next portion of the meal was a tomato, cucumber, onion and feta salad and a dish of Bosnian stuffed peppers and potatoes.

She choose this dish because of how much Jeremy had enjoyed it years back when he worked for her. The peppers are beautiful in the pan and so full of flavor.

It was such a relaxing night sipping wine and taking breaks in between bites for conversation. Zina spoiled us by sending us home with three to-go containers and we have been snacking on them ever since.

Sunday was a day for cleaning and getting ready for the week. Starbucks was the first stop and then we hit the ground running. The yard was mowed, the house was cleaned and I had a cardio workout in the books by 2pm. After all of that work, I had time to do some crafts.

This project is for my desk at work. My card stock was my favorite purchase of the day, Once Upon a Time from Joann’s.

For dinner we had salmon, roasted broccoli and left over mashed potatoes. I used to never touch anything that was fish related but salmon is growing on me. I found myself really enjoying this meal.
