Baked Parmesan Zucchini

Firstly, thank you so very much for your continued patience as I wait for my domain name to transfer from my .com website to my .org website. I initiated the transfer at the end of last week and it will be complete by Wednesday.

I am hoping that everyone had an amazing weekend with their moms. We celebrated on Saturday night because my brother and I both had to work on Sunday. When I asked mom what she wanted for dinner she told me anything as long as zucchini was involved. Talk about making my job easy!

I decided to bake the zucchini because we were grilling chicken inside and wouldn’t have enough room for the chicken and zucchini at the same time.

Before I started cutting the zucchini I preheated the oven to 400°F, covered my sheet pan with aluminum foil and sprayed it lightly with olive oil spray.

I cut the ends off, cut them in half and then into quarters until I had little sticks.

For the seasoning I used our garlic pepper we bought from the farmer’s market last weekend. I love to season just about everything with this seasoning, it’s simple goodness.

After the garlic pepper I sprinkled parmesan cheese all over the zucchini. You can add more or less depending on how much you love cheese.

I placed the sheets of zucchini in the oven and baked them for 30 minutes, until they were golden brown and soft.

These were full of flavor and everyone loved them. They were the highlight of the meal, my brother kept going back for more. We had them with grilled chicken and loaded baked potatoes but they were delicious all by themselves the next day.

Later this week I’ll share the rest of our mother’s day fun and workouts I’ve been doing. Today I had to switch from lower body to upper body because I was still too sore from last week!
