Mushroom Quesadilla, Mario Kart 8 Deluxe & Days Off
Jeremy and I have volleyball tonight at 7:05, 7:55 & 8:45pm and I am feeling much more up to it than yesterday. We play on two teams at the YMCA on Thursdays and tonight our one team has a double header while our other team plays. Thank you subs!
Last Thursday our game was at 8:45pm but someone on another team asked me to play at 7:05pm so we headed up early. I always eat before games even if it’s just a little something because I regretted not doing so once before. I received a ball into my thumb at a bad angle and almost passed out. I knew better than to skip dinner, lesson learned! Anyway back to last week.
Jeremy actually did the cooking that night and made me a delicious mushroom quesadilla. Hello cheesy goodness! He even went outside and grabbed some of our cilantro that’s growing like mad to add to it.
We managed to lose every one of our games that night so tonight we are hoping for better.
I was off work Friday and Saturday last week and Friday just so happened to be the day Mario Kart 8 Deluxe came out. Jeremy preordered it on Amazon and it showed up to the house about noon.
It’s always so satisfying to hold. That’s probably the nerd in me though. Jeremy has agreed to an in depth interview on Mario Kart so be looking for that later.
We decided to grab Breakfast and Burger for lunch before we sat down to power through some levels. I got the Pineapple burger and Jeremy go the Blue Ribbon burger. I was so hungry by the time we had lunch there were no pictures to be had, sorry, not sorry. If you live in St. Louis, this little diner should be a must. I want a diner like Luke’s in Gilmore Girls, I’m willing to relocate or maybe we should just open one.
We played through a ton of Mario Kart and I even managed to get 3 stars on one of the Grand Prix’s, which is saying a lot because Jeremy is always so far ahead that the computers wreck me.
Saturday Ke$ha got to go to daycare because in case you haven’t seen, it’s been raining like mad and flooding everywhere here. She needed to get out of the house and get some running in.
While she was at daycare Jeremy and I went for coffee and then headed to Target to wander around. This is when we got the IKEA itch. Have you had it before? The sudden urge to wander around a huge store filled with the most of everything? We have been wanting a glass doored case for the basement to store all of the games and game systems Jeremy and I have accumulated and we also bought a shelf for all the amiibos. I still can’t show you though because he wants people to be surprised when they come visit.
Monday was the last day of our draw volleyball league. I whipped up some taco salads before we left. They had butter lettuce, onions, red peppers, corn, black beans, tomatoes, shredded chicken, taco cheese and I mixed our ranch with some salsa for the dressing.
We ended up at a 50% win/lose ratio with 27-27. Not horrible, not the best. Now we have a month off of that league and it will restart in June on Wednesdays. We have no idea what we are going to do with our Mondays now.
Tuesday I had off work and Jeremy had to go into the office. I did some cleaning around the house and made myself breakfast. I made a scramble out of 1/4 cup diced yellow peppers/onions that I had left over, 1/4 cup shredded chicken, 3 eggs, 1/2 slice of swiss cheese and black bean corn salsa to top it.
It looks like Ke$ha is begging in this picture and well, she is, but not for the reason you may think. I was sitting in the dining room and she would not leave me alone. I had taken her outside 3 times already. When I came back inside the last time I realized that her leash was on the back of my chair… She was begging for a walk. It was sunny and warm and she knew it so I suited her up and we went out.
When we got back from the walk I let her run around the back yard while I looked at the apple trees and blueberry bush. When she was done doing her zooms I did an arm workout and she actually ended up getting a 2nd walk later that evening when Jeremy got home.
After my workout I headed up to CVS to grab a couple of items but my main goal was to check out some of their snacks. I keep hearing about their healthy options and private brand and I wanted to go wander. I loved the selection and will absolutely be returning but for this run I got Mother’s Day cards, a sparkling water and trail mix to snack on. The sparkling water was so refreshing and what thirst dreams were made of. The trail mix was a nice change of pace for me. I’m usually a regular trail mix with peanut butter kind of girl. The dried fruit was delicious. I had forgotten how much I liked banana chips. I also dropped by the local grocery store and stocked up on some Quest bars and Larabars.
The flavors I picked were all new to me except the S’mores Quest bar but that is my favorite so it was an exception. I have tried the Banana Nut Muffin and it was good but I think a new must have is the Oatmeal Chocolate Chip that I had for breakfast this morning at work. Also, Larabar hit it out of the park with the Peanut Butter & Jelly. This batch of randoms has proven to be a delicious one.
Last night, though it isn’t the best picture, I made chicken, zucchini and macaroni and cheese.
I have to go figure out what to make for dinner tonight before volleyball so I’ll leave you with a few questions!
