Last night after a long three days at work I came home and took a break on the couch. Instead of making dinner and pies Jeremy and I went to The Crows Nest in Maplewood.
I had a cider and Jeremy had a beer while we waited for our pork poutine and decided what to eat.
We love the poutine, so much Jeremy wants to take people there to eat it.
I decided to have the Philly Chicken and black beans and rice. The black beans were seasoned with a southwest flavor. My favorite part of my meal.
When we got home I worked on my coconut cream pie. I had a glass of wine suggested by our wine manager and started to catch up on Dancing with the Stars. I ended up not using my On Baking book for the recipe, I found an older recipe online that had awesome reviews.
I used the double boiler method and it turned out exactly how I wanted it to.
I toasted some coconut in the oven and added some to the custard and saved some for later when I put the whipped cream on top.
I poured it into the shell and then it went into the fridge to cool and set.
I will be topping it with whipped cream today and showing off the final product. I fell asleep on the couch and Jeremy woke me up to see Ke$ha being super cute.
The pumpkin pie is out of the oven and the apple crumble pie is in it as I type. Jeremy is going to help me with a delicious whipped cream for the coconut cream pie and then we will be headed to his parents house for the afternoon.
